My mother used to make a Gingerbread cake at Christmas and that was one of my favourites. Here is a very old recipe that I found of hers. Lor
Gingerbread
2 cups sifted cake flour
3 tespoons baking powder
1/4 teaspoon soda
2 teaspoons ground ginger
1 teaspoon cinnamon
1/2 teaspoon salt
1/3 cup butter
1/2 cup sugar
1 egg, unbeaten
2/3 cup molasses
3/4 cup sour milk or buttermilk
Sift flour, measure, and resift three times with baking powder, soda spices and salt. Cream butter thoroughly, add sugar gradually, and cream together until light and fluffy. Add egg and beat well; then add molasses. Add flour mixture alternately with sour milk, a small amount at a time, beating after each addition until smooth. Bake in greased pan (8x8x2), in a moderate oven of 350 degrees F, for 50 minutes, or until firm. My mother would do some fancy paper cutting. She would place the paper on top of the gingerbread after it had cooled and sprinkle with confectioners sugar. It always looked so pretty and tasted good.
