Easy Potato Casserole (nice one to double for Holiday Guests!)
1 package frozen cubed/ Southern-style hash brown potatoes -- (32-ounce) 8 ounces mild Cheddar cheese -- shredded 1 can condensed cream of chicken soup -- (10 3/4-ounce) 8 ounces sour cream 1/4 cup finely diced onions (optional) > I like some Maui sweet ones! Salt Ground white pepper 1 cup crushed cornflakes
Directions: Preheat oven to 400 degrees. In a large bowl, mix together frozen hash browns, cheese, undiluted soup, sour cream, onions, and salt and pepper to taste. Spoon into an 11-by-13-inch baking dish; top with crushed cornflakes. Cover with aluminum foil; bake for 45 to 60 minutes or until bubbly.
This is a nice recipe to use to fill up holiday guests. No problem in doubling the recipe, just add some extra time to throughly cook. Salt and pepper is to your family's preferred tastes, as some do like more of a peppery bite!
