This casserole is the main one my mom would serve on Christmas morning when the whole family was there. She would serve this with homemade biscuits and homemade jelly. We always looked forward to this as much as the turkey at lunch! HA! You can change it up and use other toppings such as picante sauce along with sour cream, jalapenos...well you get the picture. You can make it up the day before and cook it on the morning you need it.
Breakfast Casserole 8 eggs, beaten 1 lb. pan sausage, (such as Jimmy Dean or Owens) cooked, drained and crumbled 6 slices cubed bread (I just used white bread cause I had it) 2 cups milk 1 teaspoon salt 1 teaspoon dry mustard 2 cups grated cheese Mix all ingredients well except for cheese. Pour into a greased 9X13 casserole dish. Top with cheese and either bake at 350 degrees for 35 minutes, or cover and place in refrigerator overnight. You do not need to cover to bake. ENJOY!!!
