Date Nut Kimkels My Mom used to make these every Christmas and I tried to follow her tradition with my 2 kids. These are more like a ball than a cookie, but very good!
½ c. butter ¾ c. sugar ½ lb. (8 oz.) pitted dates, cut up (Stores sell these already cut up in 8 oz. pkgs.) 1 large egg, beaten 1 tbl. milk 1 tsp. salt 1 tsp vanilla ¾ c. chopped pecans 2 c. rice crispies shredded coconut
Combine butter, sugar and dates in large (3 qt.) saucepan and cook over very low heat until mixture comes to a boil. Meanwhile, mix together well-beaten egg, milk, vanilla and salt. Add to date mixture. Stir to combine and cook for only 2 minutes. Set aside to cool slightly. When cool stir in nuts and cereal. Form into small balls and roll in coconut. Refrigerate. Makes about 4 dozen
