Baked Sicilian Pasta 4 To 4 Servings
6 oz. dried medium shell macaroni 1 lb. ground beef or ground turkey 2 cups chopped zucchini or 1 small eggplant, cubed 1/2 cup chopped onion 1 can (6 oz.) CONTADINA® Italian Paste with Italian Seasonings 1-1/4 cups beef broth 1/3 cup CONTADINA Italian Bread Crumbs 2 Tbsp. grated Parmesan or Asiago cheese 2 Tbsp. chopped fresh parsley 1 Tbsp. butter or margarine, melted
1. Cook pasta according to package directions; drain.
2. Meanwhile, cook meat, zucchini and onion in large skillet until meat is browned; drain fat. Stir in tomato paste, broth and cooked pasta. Bring to boil.
3. Spread mixture into 2-quart baking dish. Sprinkle with mixture of crumbs, cheese, parsley and butter. Bake, uncovered, at 350°F, 30 minutes or until heated through. Garnish with parsley, if desired.
