Burger & Spinach Filled Jumbo Shells
1 pkg. jumbo shells, cooked to al dente 1 1/2 lb. ground beef, browned 4 eggs slightly beaten 1/2 c. flavored dry bread crumbs - Italian style 1 c. - 4 oz. - shredded mozzarella cheese 1/2 to 3/4 c. finely chopped onion - browned with meat 3/4 tsp. dried oregano leaves salt to taste 1/8 tsp. ground black pepper 3 c. chunky garden style spaghetti style (28 oz. jar) 2 c. cottage cheese 1 can spinach, well drained 1 small can tomato sauce, added to spaghetti sauce
Cook pasta and drain. Place on large cookie sheet to dry a bit. Heat oven to 350 degrees. Meanwhile brown meat and onion and drain. In a large bowl, stir together meat mixture, eggs, bread crumbs, both cheeses, oregano, salt, pepper & spinach. Spread thin layer of sauce on bottom of 13x9x2 baking dish. Fill each shell with about 2 tbl. meat filling. Place filled shells in prepared baking dish and cover with remaining sauce. Sprinkle with more shredded mozzarella cheese. Cover with foil. Bake about 45 minutes or until hot and bubbly. Fills about 36 shells.
*I used the new no stick foil for lining the pan and on top so the cheese wouldn't stick.
