Pineapple Lime Jello Salad
1 small package lime jello 1 cup boiling water 1 cup pineapple juice 1 can crushed pineapple, drained 1/2 pint whipping cream, whipped 1 - 8 oz. pkg. cream cheese, softened
Directions: Dissolve jello in boiling water. Add juice. Chill until thickened. Add cream cheese using the mixer, and then fold in the whipped cream and pineapple: mix well. Chill until firm.
NOTE: If you like a little crunch in these types of salads, blend in some minced celery too.

Lime Jello
1 sm. pkg lime Jello 16 oz carton cottage cheese 1 can crushed pineapple, drained 1/2 cup chopped celery 1 grated carrot 1 tsp vinegar
Directions: Dissolve Jello in 1 cup boiling water. Add 3/4 cup cold water and 1/4 cup pineapple juice. Let set to firm it up a bit before adding the other ingredients. Then add the cottage cheese, carrot, pineapple, celery and vinegar. Put in mold and set until firm.
I have been making this style of jello for YEARS! I often double the jello, and then just eyeball the other ingredients to make a nice looking blend.
