JELLIED WALDORF SALAD
1 small package lemon-flavored gelatin 1/4 teaspoon salt 1 cup hot water 1 cup cold water 2 teaspoons vinegar 1 cup diced unpeeled red apples 1/4 cup chopped walnuts 3/4 cup diced celery, seasoned with 1/4 teaspoon salt
Dissolve gelatin and salt in hot water. Add cold water and vinegar. Chill until slightly thickened. Then fold in apples, walnuts and celery. Pour into individual molds. Chill until firm. Unmold on crisp lettuce. Serve with mayonnaise and balls of cream cheese.
Makes 8 servings.
Note: For variety, omit nuts and fold in raisins (which have been steamed in hot water for 5 minutes). Or add 1/4 cup mayonnaise with the apples, nuts and celery. ;D
