Amish Cheddar Potato Casserole
6 medium potato -- peeled and sliced 2 cups cheddar cheese -- shredded salt and pepper -- to taste 1/4 cup butter 1 1/2 cups milk or sour cream 1/2 teaspoon chopped chives 1 teaspoon onion salt 2 tablespoons butter paprika Parmesan cheese
Preheat oven to 350. Cook potatoes till tender, then mash and add chives and seasonings. Heat the butter and melt the cheese, add sour cream and fold sauce into potatoes. Pour into a greased casserole and sprinkle with paprika and Parmesan cheese. Bake for 30 minutes, or until bubbly and golden.
