Rosina Boi (Raisin Pie) This is a Dutch "funeral Pie" that is traditional. Makes 2-8 inch pies
1 c. Raisin 2 c. water 1 egg, beaten 1 ½ c. sugar 4 Tbs. flour Pinch of salt 1 Lemon, juice and grated
Soak Raisins in water until soft and plump. Make pie crust using a rich pastry. Chill. Mix eggs and sugar., add flour, salt, raisins, lemon juice, and water place in top of double boiler, over boiling water, and cook gently for 15 minutees. Add grated lemon rind and stir. Cool. Line pie tins with pastry and fill shells with mixture. Crisscross strips of pastry for tops. Bake in 375 oven for about 40 minutes
