Sorry.....this is my first time on here....and I hit the wrong button in the middle of the recipe...
....so I'll start over.
For 2 or more ppl:
In a large mixing bowl, combine:
2 cups flour (Keep the flour canister handy)
1 tsp salt
Stir in either water or broth (chicken, beef, or ham) until mixture forms a wet dough.
Continue to add more flour and knead the dough until it no longer sticks to your fingers. (This is the messy part, and it's best to remove any rings you may be wearing)
Once the dough is "dry" on the outside...clean off your fingers and proceed as follows.
On a large clean floured surface (I use the kitchen table):
Take a portion of the dough....and dust it with flour.
Roll it out....continuing to dust the dough, and the table, with enough flour that it doesn't stick to the rolling pin or the table.
I try to roll mine out to about 1/8 to 1/4 inch thick (I like mine thin so I try to stay closer to 1/8 inch). Keep in mind, the squares will "swell" as they cook.
Once you have the dough rolled out, cut it in approx. 2" squares. I have found that a pizza cutter works very well.
Place the squares on a baking sheet covered with wax paper.
Continue to roll out and cut the remaining dough and layer it on the baking sheet....making sure you keep wax paper between the layers of dough.
Once you have finished, add the squares....one by one to boiling broth. As you add the squares, stir them often. Of course, the more pot pie you want to make, the more broth you will need.
After you have added the squares, lower the heat to simmer, and stir occasionally until done. By the way, I prefer mine not to be thick and gooey...and you may want to try it a little thinner than you were used to...but that's up to you.
I know I said in the beginning that this is simple....and it really is.....after you've done it a few times. I guess it's just not as simple to explain as it is to make...but I hope this will help you.
I was surprised how many "Amish" cooking sites I visited...and none of them had this recipe. If you click on a "pot pie" recipe....it comes up as a "meat pie"...but try this and let me know how it turns out.
