AMISH BEEF STEW Serve this slow-cooked stew with fresh warm bread or rolls for a thoroughly warming (and heart-warming) dinner. Servings: 8
3 cups cubed beef 1 onion, cut into cubes 8 large potatoes, scrubbed and cubed 2 cups carrots, sliced 2 cups celery, sliced 1 cup tomato juice ½ cup flour ¼ cup margarine Salt to taste In a hot skillet with the margarine, brown beef and onion in flour. Transfer browned beef and onion cubes to a slow-cooker. Heat on low for 2 hours, then add vegetables and 1 cup tomato juice. Heat for 1 or 2 more hours until ready to serve.
