This is the recipe I use which has worked for me every time.
Pennsylvania Dutch Funnel Cakes
2 cups milk 2eggs 3 cups flour 1 teaspoon baking powder 1/4 teaspoon salt 1/4 cup sugar
Beat together the milk and eggs. Slowly beat in flour, baking powder, salt and sugar. Pour through funnel into hot fat or vegetable oil at 375 degrees F using thermometer. Quickly turn over the pieces. Drain on paper towels. Sprinkle with powdered sugar.
(If you don't have a funnel, drop dough slowly off large spoon moving batter about.)
