Amish Meat Loaf
2 lb. ground beef 2-1/2 cups crushed butter flavored crackers (i.e., Ritz, Waverly etc.) 1 small onion, chopped 2 eggs 3/4 cup ketchup 1/4 cup brown sugar 2 slices bacon 1 cup ketchup 2 TB vinegar 3/4 tsp. salt, or to taste 2 TB prepared yellow mustard 1/2 cup brown sugar
Preheat the oven to 350ยบ F.
In a medium bowl, mix together ground beef, crushed crackers, onion, eggs, 3/4 cup ketchup, and 1/4 cup brown sugar until well blended. Press into a 9" x 5" loaf pan. Lay the two slices of bacon over the top.
Bake for 1 hour in the preheated oven, or until cooked through. While the loaf bakes, mix together the remaining one cup ketchup, vinegar, salt, mustard and 1/2 cup brown sugar. Spread over the top of the meat loaf for the last 15 minutes of baking.
Makes 1 loaf (9" x 5") 8 servings.
****** Notes....I did not use as much ketchup as the recipe called for....in the meat mixture I only used 1/2 cup instead of 3/4 cup...In the topping mixture I only used about 1/2 to 3/4 cup of ketchup. I think you could really make up only 1/2 of the topping recipe...I only used about half of what I made up.
