1 jar strained apricots (baby food) 1-3/4 Tbs. honey 1 Tbs. plus 1 tsp. lemon juice 1 Tbs. plus 1 tsp. soy sauce 1 clove garlic, crushed 1/3 cup ginger ale dash of ginger 1 tsp. lemon rind, grated 2 lbs. boneless pork sirloin roast Combine all ingredients, except pork, in a bowl. Place pork in a shallow dish and pour marinade over. Cover and marinate in refrigerator at least 4 hours, turning occasionally. Preheat oven to 325°F. Remove pork, reserving marinade. Place in roaster and roast about 30 minutes per 1 lb.; during last 2 hours, use marinade to baste roast. Baste about every 20 minutes. Separate fat from drippings. Discard fat and serve drippings over sliced meat.
