Carrot Cookies
3/4 cup shortening 1 cup sugar 1 egg 2 bottles baby food carrots (4 1/2 oz) 2 1/4 cups flour 1/2 tsp. salt 1 tsp. baking powder 1 tsp. vanilla
Beat together the shortening, sugar, and egg till smooth. Add the rest of the ingredients and mix well. Drop by teaspoons on greased baking sheet. Bake 10 to 12 minutes at 350*F.
Ice while warm with orange icing: 1 cup powdered sugar 3 Tbsp. orange juice
