Spicy Ground Beef and Vegetable Soup (Crockpot) This is from Rodale's "Your Family Will Love It"cookbook. It has old-fashioned flavor and is spicy in the sense that a molasses cookie or cabbage rolls are spicy - lots of flavor rather than being hot. Lots of veggies - good nutrition for the homebound in one bowl.
Spicy Ground Beef and Vegetable Soup
12 ounces ground beef 2 cups chopped onion 2 cloves garlic, minced 6 cups chicken broth 3 cups shredded cabbage 1 large carrot, chopped 2 cups frozen corn 1 - 8 ounce can tomato sauce 1/4 cup uncooked rice 1/4 cup ketchup 1 Tablespoon brown sugar 1 Tablespoon cider vinegar 2 teaspoons dried thyme 1/4 teaspoon cinnamon 1/4 teaspoon pepper 1/8 teaspoon cloves 1 bay leaf
Brown the ground, onions and garlic. Drain off the fat. Combine meat and all other ingredients in a slow cooker; stir to combine. Cook over low heat for 9 hours.
