At Halloween I never put a candle in my carved pumpkin. Instead I fill the inside with Christmas mini lights and use that as a light source to light up my creation. Why you ask would I do that. Well I process my pumpkin the next day to use for pies threw out the year.
Step one. after Halloween be sure to keep pumpkin in the fridge.
Cut the pumpkin into pieces .
Cook pumpkin in lots of boiling lightly salted water.
When cooked remove to a strainer and let cool slightly so you can handle the pieces.
Using a spoon remove the flesh from the rind and place
in a blender. Puree the flesh adding a little of the cooking water if necessary.
Fill pint jars that have been washed and placed in a 250*F oven to the start of the neck of the jar. Add pre boiled canning lid, fix on screw band. Put in a boiling water bath and process for 1 hour.
Making the pies is so easy just use one pint jar of your pumpkin and it will make 2 pies that taste like something. Not like the store bought cans that have no flavour. If you are not into canning the pumpkin you can cool the pumpkin and put in zip lock freezer bags in 2 cup lots or what ever size your pie recipe calls for and freeze when cold.

DO NOT TRY TO CAN PUMPKIN IN JARS UNLESS IT HAS BEEN COOKED FIRST. My mother taught me this trick and I have been doing it for over 30 years and have never had a failure and her mother taught her this trick.and am always asked to bring the pumpkin pies to special dinners and get togethers .
