1 carton (16-oz) Ricotta cheese 1 carton (16-oz) sour cream 2 pkgs. (16 oz) cream cheese 1 cup sugar 1 teaspoon vanilla extract 4 eggs 3 Tablespoons flour 3 Tablespoons corn starch Juice of 1/2 lemon 1 stick (8-Tablespoons) butter or margarine (melted) Preheat oven to 350-degrees. Must use 9" spring form pan; coat inside sparingly with butter or margarine. Make graham cracker crust by following recipe on Nabisco Graham box. Mix all of above ingredients in a large bowl. Mix very well until completely smooth. Pour into prepared graham cracker crust. Bake for 1-hour WITHOUT opening the oven door.
Shut off oven; leave cake in oven for 2 more hours. Very important - do NOT open the oven door. After two hours, remove cake. Then leave it cool thoroughly for 3 to 4 more hours. Then release from spring form and refrigerate. Serve when cold.
