Garlicky Black-Eyed Pea Spread or dip
1 cup canned or pre-cooked black-eyed peas 2 cloves garlic, minced and lightly sauteed in olive oil 1/2 tsp. cumin 1/8 tsp. ground red pepper
Directions:
Mash black-eyed peas with a fork. Add garlic, cumin and spices. Blend until combined. Add more spices, salt and pepper to taste. Use in sandwiches or as a dip for vegetables or chips.
Serves: 2
