Fried Tortilla Chips
Ingredients: 8 Corn tortillas (the best ones you can find) Vegetable oil
Directions: Arrange the tortillas in a stack and cut into 6 equal wedges. Pour about an inch of oil in a large frying pan over medium-high heat to 350°F on a deep-fat frying thermometer. Fry just a few at a time, turning occasionally, until crisp and lightly browned (about 1 minute or less). Drain on paper towels; sprinkle lightly with salt, if desired. Store in an airtight container.
Notes: Even though the supermarkets provide a bewildering array of choices when it comes to tortilla chips, these are worth the effort.
******************************************************************** Sausage Dip:
½ lb. Lean ground beef ½ lb. Pork sausage 1 lb. Velveeta cheese 1 C Onion, finely chopped 1 C Chunky salsa (Mild, Hot or Hottest -- your choice) ½ can Cream of mushroom soup 2 Large cloves garlic, minced or put through a garlic press
Brown ground beef and sausage together until crumbly. Drain on paper towels to remove as much fat as possible. Combine beef/sausage mixture in a heavy saucepan, and add the remaining ingredients. Cook and stir over low heat until cheese is melted, and mixture is thoroughly combined. Serve warm with tortilla or corn chips. Makes 4 to 5 cups.
