1/4 cup extra virgin olive oil 1 large sweet onion, peeled and chopped 1/3 pound shallots, peeled and chopped 1 pound baby spinach, coarsely chopped 1 8-oz. block of cream cheese, softened 1 8-oz. container sour cream Salt and pepper to taste
Saute onions and shallots in olive oil until golden brown, add spinach and cook until wilted. Remove from heat and allow mixture to cool. Place spinach mixture in a bowl and add cream cheese, sour cream and salt and pepper. Chill before serving; serve with crackers or crispy bread.
The Skinny: Use light cream cheese and sour cream.
