From Nancys News Letters March 17th, 2003 Hi Nancy, This is in answer to Anita in Camarillo who is looking for a recipe for Lemon Curd. I have a delicious one that works and is low fat to boot. From: Michelle in Ottawa, Canada Lemon Curd Makes 1 1/2 cups 3 eggs 3/4 cup sugar 1 tbsp grated lemon rind 1/2 cup fresh lemon juice 2 tbsp soft butter In microwave bowl, whisk together eggs and sugar. Whisk in lemon rind, lemon juice and butter. Microwave on HIGH for 2 minutes; whisk untilsmooth. Microwave on high for 2 to 3 minutes longer until it boils and thickens slightly; whisk again until smooth. Let cool, then refrigerate. (It will thicken a lot more as it chills) May be stored in covered jar in refrigerator for up to a week. Per tbsp: 40 calories, i g. fat, 6 g. carbohydrate, i g. protein.
