Peanut butter sauce for Ice Cream ( I did not include the ones used in Asian cooking)
From this web site, I found a simple recipe below that looks like exactly what you are looking for:

Georgia Peanut Butter Sauce
Puttin' on the Peachtree
1 cup sugar
1 tablespoon white corn syrup
1/4 teaspoon salt
3/4 cup milk
6 tablespoons peanut butter
1/2 teaspoon vanilla extract Mix sugar, Karo (corn syrup), salt and milk. Cook over low heat, stirring constantly until thickened. Add peanut butter and mix well. Remove from heat, let cool, add vanilla. Serve on vanilla ice cream.
THEN, I found one with PB and chocolate that looks even BETTER at this site:

Milk Chocolate
1 tablespoon butter
1 tablespoon brown sugar, packed
1 tablespoon light corn syrup
1/4 cup smooth peanut butter
1/2 cup half-and-half
4 1/2 ounces milk chocolate, chopped
1/8 teaspoon salt
2 tablespoons water
In a small saucepan melt butter with brown sugar and corn syrup over medium heat, stirring, add peanut butter and half-and-half; bring the mixture to a simmer. Add chocolate and salt, stir sauce until it is smooth, then stir in the water.
Serve warm sauce over ice cream. Makes 1 cup.
