Fresh Fruit Sundaes
2 Tbs (30 ml) butter 1/4 cup (60 ml) packed brown sugar 2 cups (500 ml) sliced fresh peaches, plums, apricots, or strawberries 1/4 tsp (1 ml) ground cinnamon Vanilla ice cream 1/2 cup toasted chopped walnuts or pecans
Heat the butter in a skillet over moderate heat and stir in the brown sugar until dissolved. Add the fruit and cinnamon and saute just until the fruit begins to soften, about 3 minutes. Spoon over scoops of vanilla ice cream and top with toasted nuts. Serves 4 to 6.
