Easy Sugar-Free Applesauce
10-15 apples (Red Delicious)
Approximately 1 Tbsp. cinnamon (or more to your taste)
4 packets of Splenda, Equal (or equivalent) - (or 4 Tbls. of sugar for those not needing to restrict it) Wait until it is cooled to decide how much more you might need for your desired state of sweetness.
Directions: Do not peel the apples! Cut in quarters and trim off stem and seeds. Put apples into large pot with lid, cover with water and bring to boil. Lower heat to small boil. Keep boiling and eventually the peels will start to lift away from the apple. Using tongs, pull peels off. As the sauce continues to slow boil and as the skins are removed, the sauce will be chunky. Add cinnamon and Splenda or sugar, and cook for another 5 minutes. Let cool and you can mash down to your desired consistency. Makes about a half gallon.
