Ingredients for 8 Servings
Crust 3 cups Cooked rice 1/4 cup Sugar 2 Eggs, beaten Filling 8 oz Package cream cheese, softened 1/4 cup Sour cream 1/4 cup Confectioners sugar 1 tsp Vanilla extract Topping 1/2 cup Apricot or peach preserves 3 cups Fresh fruit (sliced strawberries, raspberries, blueberries, sliced kiwi fruit, grape halves)
Procedure:
1. Crust--Combine rice, sugar and egg in medium bowl. 2. Press into 12-inch pizza pan or 10-inch pie pan. 3. Bake at 350 degrees 10 minutes. 4. Cool. 5. Filling--Beat cream cheese and sour cream in medium bowl until light and fluffy. 6. Add sugar and vanilla; beat until well blended. 7. Spread over crust. 8. Topping--Heat preserves with 1 tablespoon water in small saucepan over low heat. 9. Strain; cool. 10. Brush half of glaze over filling. 11. Arrange fruit attractively over crust, starting at outer edge. 12. Brush remaining glaze evenly over fruit. Refrigerate 1 to 2 hours before serving. 13. Nutrition 14.
