Circe's Fruit Salad Ingredients: 1 fuji or gala apple 1 navel orange 1 banana, still slightly green 1/4 cup orange juice 8 oz of soy yogurt, vanilla flavored shredded coconut Directions: Peel, segment and dice orange. Dice apple and peel & slice banana. Toss together in a bowl with 1/4 cup orange juice and chill for about an hour. Before serving, drizzle soy yogurt and sprinkle coconut over each individual portion. This makes a great dessert or breakfast complete. Serves: 2-3
