For 4 Servings:
2 cups lowfat ricotta cheese 2 tsp. vanilla extract 1 Tbs. rum extract 1/2 cup sugar 2 cups pineapple chunks, drained 1/2 cup chopped walnuts Combine all ingredients in a food processor or blender and process until smooth and fluffy. Transfer to individual serving bowls.
