Prep: 15 min, Cook: 5 min, plus refrigeration time.
For 4 Servings:
5 medium peaches, peeled, stoned 1/4 cup sugar 1 Tbs. plus 1 tsp. honey 2 tsp. lemon juice 1/2 tsp. ground nutmeg 1 Tbs. plus 1 tsp cornstarch, blended with 1 Tbs. plus 1 tsp. water 1/4 cup light sour cream Combine first 5 ingredients in a blender or food processor and process until smooth. Transfer to a heavy saucepan. Stir in cornstarch mixture. Cook over medium high heat, stirring, until mixture thickens and just comes to a boil. Cool and stir sour cream into peach mixture. Divide between individual dessert dishes. Refrigerate and serve cold.
