Pear Fritters
2 1/4 cups flour 1 package active dry yeast 1 tsp cinnamon 1/2 tsp salt 1/4 tsp nutmeg 1/2 cup milk 1/4 cup vegetable oil 2 TBS honey 2 eggs 1 medium ripe pear peeled and chopped Oil for deep fat frying Sugar or confectioners sugar
In a mixing bowl, combine the flour, yeast, connamon, salt and nutmeg. In a saucepan, heat the milk, oil and honey to 120* to 130*. Add to dry ingredients, beat until moistened. Add eggs; beat on medium speed for 3 minutes. Stir in pear and then let sit covered in a warm place until doubled, about 1 hour. Heat oil to 375*F. Drop batter by TBS into hot oil a few at a time. Fry til golden brown on both sides. Drain on paper towels. Roll in sugar while warm. Serve warm. Makes about 3 dozen.
