This simple and delicious dessert works with any combination of canned fruits.
Ingredients:
1 can (15 1/4 ounce) sliced peaches, drained 1 can (15 1/4 ounce) apricot halves, drained 2 cans (8 ounces each) sliced mango, drained 1 can (8 ounce) pineapple chunks in juice, drained 1/2 cup all-purpose flour 1/4 cup granulated sugar 1/4 cup packed brown sugar 4 tablespoons cold butter or margarine, cut up 1/4 cup sweetened shredded canned coconut 1/4 cup chopped macadamia nuts or almonds Preparation:
Preheat oven to 375°F.
Place peaches, apricots, mango, and pineapple in a 9” square glass baking dish. Mix gently with a rubber spatula.
In a medium bowl, stir together the flour, and sugars, crumbling any lumps of brown sugar. With your fingers or a pastry blender, cut in the butter until the mixture forms fine crumbs. Stir in the coconut and macadamia nuts. Sprinkle over the fruit.
Bake until golden brown, 35 to 40 minutes. Cool on a wire rack. Serve warm or at room temperature.
