Peach Dumpings Pastry: @ 1/2 cups flour 1 tsp. salt 2/3 cup shortening 1 egg yolk 1/4 cup lemon juice Mix and divide into 6 portions. Roll out into squares. Peel 4 to 5 ripe peaches and cut into quarters. Roll the pieces in a mixture of: 1/2 cup of sugar and 1 1/2 tsp. cinnamon Place about 3 quarters (depending on size) in the center of each square of pastry. Place a dot of butter on each. Bring sides of pastry up and pinch together to enclose peaches. Set each a little apart in a large loaf pan. Pour hot syrup around them. Bake immediately at 400* for 30 minutes or until golden brown. Serve with thick cream or ice cream. Syrup: 1/2 cup sugar 1/2 cup corn syrup 1 cup water 3 tbsp. butter 1 tsp. cinnamon Mix and bring to a boil. Pour over dumplings before baking. Jay
