(makes 1 serving)
1 medium Golden Delicious or Jonagold apple, 5 ounces, cored and cut into 5 rings 1 tbsp dark raisins 1 tbsp fresh orange juice 1 tsp light brown sugar ground cinnamon
Preheat oven to 350 deg F. Cut a 12-inch square of heavy-duty aluminum foil, placing the foil flat on a work surface. Pile the apples in the center of the foil. Sprinkle on the raisins and orange juice. Dust the apples lightly with brown sugar and cinnamon. Bring the corners of the foil together and pinch foil to seal. Place bundle on a baking sheet and bake until apples are tender, about 20 minutes. Eat out of the foil and spoon into a bowl.
