Apple Fritters 2 cups all-purpose flour 1 tablespoon baking powder 1/2 cup sugar 1 tablespoon salt 2 eggs 2/3 cup milk 4 large firm green or other tart apples, peeled, cored and sliced 1/4 inch thick 2 tablespoons unsalted butter, melted vegetable oil for deep-frying confectioner's, sugar for dusting
Sift together the flour, baking powder, sugar, and salt in a mixing bowl. Mix well. Beat the eggs and mile together and add the flour mixture, stirring until smooth. Fold in the sliced apples and melted butter. Allow batter to stand at least 10 minutes before using. Heat the oil to 375 degrees in a pot suitable for deep-frying. Drop large spoonfuls of batter, the size of a walnut, into the hot oil. Cook the fritters for a few minutes until they are golden brown or even a little darker. Drain onto paper towels. Dust with confectioners sugar and serve at once.
