2 - 3 lb. chicken, skinned 1/2 c. butter 1/2 tsp. garlic salt 1 tsp. flour 2 tsp. flour 1/3 c. water 3 tbsp. lemon juice 1 1/2 tsp. sugar 1/8 tsp. pepper 1/8 tsp. poultry seasoning
Melt butter, garlic salt and 1 teaspoon flour. Blend in 2 teaspoons flour, stir until bubbly and remove from heat. Add water, lemon juice, sugar, pepper, poultry seasoning and red pepper. Heat mixture to boiling; remove from heat. Place chicken bone side down 5 inches from coals. Cook 20 to 30 minutes. Cook additional 20 minutes basting with lemon sauce.
