Lemon Herb Marinade
zest and juice of 2 lemons
1 large onion, peeled and thinly sliced
½ cup olive oil
2 T. minced garlic
1 tsp. Kosher salt
½ tsp. ground black pepper
1 T. dried thyme or 3 T. chopped fresh thyme leaves
1 T. dried rosemary or 3 T. chopped fresh rosemary
10 juniper berries, crushed
1 T. fennel seeds
Combine all ingredients in a non-metallic bowl. Use as a marinade for chicken, pork, lamb, turkey breasts, sea bass, halibut, scallops, shrimp and salmon. Makes about 1½ cups marinade
