For 75 Servings:
9-1/2 cups unsalted butter 8-1/2 lbs. sugar 2 quarts plus 2 cups sour cream 38 eggs 2/3 cup plus 2 Tbs. vanilla extract 9-3/4 lbs. all purpose flour 1/3 cup plus 1 Tbs. baking powder 3-1/4 Tbs. baking soda 1/3 cup plus 1 Tbs. salt 4-3/4 cups unsalted butter 6-1/3 cups brown sugar 6-1/3 cups sugar 1-3/4 cups ground cinnamon Preheat oven to 375°F. Butter an 8-9 inch tube pan. Cream the butter with the sugar until smooth. Add the sour cream, eggs and vanilla extract. Blend until smooth. Combine the flour, baking powder, baking soda, and salt. Add to the sour cream mixture and stir until evenly mixed. Blend together remaining ingredients for the streusel topping. Add half the sour cream mixture to the pan. Place half the streusel topping on top of the sour cream mixture. Pace the other half of the sour cream mixture on top of the streusel topping. Sprinkle the remaining streusel topping on top. Bake for 45 minutes until springy to the touch.
