10 lb tart apples - unpeeled, cored, & sliced 4 c sugar; to taste 3 c water 1 T cinnamon 1 T lemon juice Quarter, core, and slice the unpeeled apples. Put apples and water in pot. Cover and simmer until tender (about 1 hour). Put thru a course strainer or ricer, then put apples in crockpot (6 quart or larger), cover and cook on high 1-3 hours (until bubbling steadily). Uncover and cook 6 - 9 more hours on low (my crock I have to use high to cook uncovered). Stir every couple hours. Makes 8 pints.
I let it go overnite. It is done when you take a small amount on a spoon and don't get a ring of liquid around the apple butter.
