Cranberry Jam Cranberry Jam is a spectacular way to enhance the flavor of a charcoal roasted turkey; the fresh ginger really perks up the palate. This recipe can be made in advance and is actually better when done so.
1 tablespoon unsalted butter (no substitutes) 1 tablespoon grated fresh ginger 1 12-ounce bag cranberries 1 teaspoon grated orange peel 1 tablespoon fresh orange juice 1 teaspoon grated lemon peel 1 tablespoon fresh lemon juice 1-1/2 to 1-3/4 cups sugar 1/2 cup water 1/4 cup port wine 1/4 teaspoon ground cinnamon Melt butter in a medium saucepan over medium heat. Add ginger and cook 1 minute. Stir in remaining ingredients. Bring to a simmer and cook 5 to 7 minutes, until the cranberries begin to pop. Transfer to a serving bowl. Let stand until completely cooled. Cover and refrigerate up to 5 days. Makes 40 (1-tablespoon) servings.
