Apple Preserves
1 c. water 6 c. apples, peeled + cored + sliced 1 tbsp. lemon juice 1 pkg. powdered pectin 1/2 c. thinly sliced lemon, (about 1 med.) 4 c. sugar 2 tsp. cinnamon or nutmeg
Combine apples, water and lemon juice in large saucepan. Cover and simmer 10 minutes. Stir in pectin and bring to a boil, stirring frequently. Add lemon slices and sugar. Return to a rolling boil. Boil hard 1 minute, stirring frequently. Remove from heat; add cinnamon or nutmeg. Pour in hot jars, leaving 1/4" at top. Adjust caps and process for 10 minutes in boiling water. Makes about 6 half pints.
