2 cups milk, scalded 2 squares unsweetened chocolate 4 tablespoons corn syrup 1 teaspoon vanilla flavoring 1 teaspoon orange flavoring 1/4 teaspoon salt 3/4 cup sugar 1 cup whipping cream 2 egg whites, stiffly beaten 3 tablespoons quick cooking tapioca
Melt chocolate over hot water. Add milk, tapioca, and salt. Cook until tapioca is clear. Add sugar and syrup. Stir until sugar is dissolved. Rub the mix through a coarse seive. Chill thoroughly. Fold in egg whites. Add flavorings. Carefully fold in stiffly whipped cream. Pour into freezer tray, or electric ice cream machine. Freeze---8 servings
