ICE CREAM MERINGUE PIE Marängpaj med glass
This absolutely luscious dessert can be prepared in advance and kept in the freezer for several months! Please please please, promise you'll try it this summer ... it's a must! :-DDD
Makes 1 pie = serves approx 8
Pie dough: good 3/4 cup flour 2 tbs sugar 3 1/2 oz butter or margarine
Filling: good 3/4 cup strawberry jam 4 - 6 cups strawberry ice cream
Meringue: 3 egg whites good 1/3 cup sugar
Decoration: strawberry jam
Dough: Chop together flour, sugar and fat and work the dough together. Press it out in a standard-sized pie pan. Leave for 15 minutes, then bake at 350F for about 15 minutes. Let the pie crust cool completely.
Spread out the strawberry jam in the crust. Soften the ice cream slightly in room temperature, then use an electric beater to make it soft and smooth. Divide the ice cream in the pie crust in an even layer and put in the freezer while you make the meringue.
Beat the egg whites stiff and foamy and add sugar, little by little, while beating vigorously. Divide the meringue on top of the ice cream until the pie is completely covered. Put in the oven at 475 - 525F for 4 - 5 minutes and let the meringue take color.
Drizzle strawberry jam over the surface and serve. Enjoy!
