Prep: 15 min, Cook: 30 min, plus cooling time. 3/4 cup plus 2 Tbs. all purpose flour 1/4 tsp. baking soda 1/2 tsp. baking powder 1/4 tsp. salt 1/2 cup unsalted butter, melted and cooled slightly 1 cup light brown sugar, firmly packed 1 large egg 1 tsp. vanilla extract 1 cup chopped pecans or walnuts Preheat oven to 350°F. Generously butter a 9 inch baking dish and set aside. Sift first 4 ingredients together in a small bowl.
Combine melted butter with brown sugar in a 2 quarts bowl. Beat with electric mixer until smooth and light in texture. Add egg and vanilla and beat thoroughly. Add dry ingredients and mix thoroughly. Stir in chopped nuts.
Transfer mixture to buttered baking dish and bake about 30 minutes, or until edges brown and pull away from sides and tester comes out clean when inserted in center. Cool on rack.
Serve with vanilla ice cream if desired.
