Combine in a small saucepan:
3/4 cup frozen apple juice concentrate 2 Tbsp arrowroot or cornstarch Bring to a boil, stirring constantly. Remove from heat. Add:
1/2 tsp cardamom 1/2 tsp coriander Place into a pie shell: 5 large apples, peeled and sliced Sprinkle with 1/4 tsp. salt or to taste. Gently pour the thickened juice over apples. Cover with top pie shell. BAKE: 350 degrees for 45 minutes, or until apples are soft when poked with a knife.
