This recipe was taken from a book "The Australian Christmas In Days Gone By" I found the book at a local market, a real bargain! I made this cake for Christmas three years ago. As I'm a ;D HUGE ;D fan of fruit cakes I was suitably impressed with this one. Hope others enjoy it too. Have mixed in a bowl: 500g each of sultanas, raisins and currants, 250g blanched almonds, 250g mixed peel, 2 tsp lemon essence. In another bowl mix 4 and 1/2 cups flour with 1 small tsp nutmeg, 1 full tsp cinnamon, 1/2 tsp ratafia, 1 tsp mixed spice, Beat: 2 cups sugar, 1lb butter and flat tsp of bicarb soda to a cream. Add: 8 eggs one at a time, beating well between each addition. Then alternately add the flour mix and fruit mix until all combined. Bake in a slow oven for about 4 - 41/2 hrs. The recipe said to tie about 20 thicknesses of paper around the outside of the tin LOL I had no trouble with a well greased and lined tin with 2 thicknesses of baking paper.
