Biscuits were on sale at the grocery. Started searching for recipes that used biscuits.
CHICKEN PIE
1 (3 lb.) chicken 5 c. water 1/2 tsp. salt 1 c. sliced celery 2 c. frozen mixed vegetables 5 tbsp. flour 1/2 c. light cream or milk 2 1/2 c. chicken broth 1 tsp. salt 1/8 tsp. pepper Bisquick drop biscuits or canned refrigerator biscuits
Cook chicken in salted water until tender. Drain, reserving broth. Remove meat from bones. Cook vegetables; set aside. In saucepan, combine flour mixture. Cook over medium heat, stirring constantly until thickened. Stir in vegetables. Place 1/3 of vegetable mixture in 2 quart casserole. Add chicken meat then remaining vegetable mixture. Bake at 400 degrees until bubbly about 20 minutes. Serves 6. Top casserole with biscuits and return to oven for 10-15 minutes until biscuits are golden.
