Try this quick and easy pasta dish.
Servings: 4
Total Prep Time: 15 to 20 minutes
Sun-dried Tomato Pasta Ingredients:
1 pound pasta of your choice
1 large clove or 2 small cloves garlic
1 package (4- or 5-ounce) herbed feta cheese
1 small jar sun-dried tomatoes (in a cello bag or oil-packed)
2 to 3 tablespoons olive oil
2 tablespoons chopped fresh basil (or 2 teaspoons dried basil)
1/3 cup chopped toasted pine nuts, pecans or walnuts (optional)
Preparation:
1.. Boil pasta in salted water. Drain, reserving the liquid. Set
aside.
2.. Put oil in the bottom of a serving dish. Crush garlic and place
in oil.
3.. In a separate bowl, break up feta cheese until it's crumbly.
Add
enough pasta water to make it into a lumpy mixture. Place in serving
dish.
4.. Chop or cut sun-dried tomatoes into small pieces and add to the
cheese.
5.. Mix in toasted pine nuts, pecans or walnuts.
6.. Wet pasta with some of the reserved water and add to the
mixture.
Toss well.
Tips & Timing: If the pasta seems dry, add pasta water and olive oil.
