Spaghetti Pizza
1-package (7 ounces) spaghetti
1/2-pound bulk Italian sausage
2-eggs
3/4-cup shredded Parmesan cheese
1 1/2-tsp Italian seasoning
1 1/2-cups shredded mozzarella cheese (6 ounces)
1-cup ricotta cheese
2-tbsp milk
3/4-cup spaghetti sauce
1-small green bell pepper, coarsely chopped (1/2 cup)
Heat oven to 350 ºF. Grease cookie sheet or 12-inch pizza pan. Cook and drain spaghetti as directed on package. Cook sausage in 10-inch skillet over medium-high heat, stirring occasionally, until no longer pink; drain.
Beat eggs in large bowl with fork. Stir in 1/2 cup of the Parmesan cheese and the Italian seasoning. Mix together egg mixture and spaghetti. Spread in 11-inch circle on cookie sheet.
Mix 1 cup of the mozzarella cheese, the ricotta cheese and milk. Spread over spaghetti mixture to within 1 inch of edge. Spread with spaghetti sauce to within 1/4 inch of edge of ricotta mixture. Top with sausage, bell pepper and the remaining Parmesan and mozzarella cheeses. Bake 25 to 30 minutes or until cheese begins to brown. 8 servings.
