Linguini with Walnut Crusted Goat Cheese
8 round goat's cheese, 1 oz each 1 lb. egg noodle linguini 2 cloves garlic, sliced thin 3 tbsp butter 5 oz toasted walnuts 1 bunch of basil, chopped 1 bunch fresh dill, chopped 1 bunch fresh parsley, chopped 2 plum tomatoes, coarsley chopped 10-12 calamata olives, chopped Ground black pepper Salt Olive oil
In a food processor, chop 3 oz of walnuts, gently press the goat cheese round into the chopped walnuts.
In a large pan, heat 2 tsp of butter, lightly brown the cheeses on both sides.
Set aside.
Cook the linguini in salted boiling water.
Sautee the garlic and 8 tbsp of olive oil until golden brown.
Stir in the cooked pasta, butter, olives, tomatoes, basil, parsley, dill and walnuts.
Toss everything together and season with salt and pepper.
Divide the linguini onto 4 plates and top with goat cheese rounds.
Before serving, drizzle with olive oil and sprinkle with more pepper.
